After the great success of previous courses, the Chef Dalicandro back to Apuliaat the cultural association Kitchen's Angelsfor an intensive demonstration lesson on drying in the kitchen to discover and explore the potential of the dryer.
In this second level course more complex processes will be approached in which drying can be a viable alternative.
The dryer in the kitchen can replace other kitchen tools or speed up certain steps.
The chef will talk about candying oranges (inspired by the candying technique used by Rolando Morandin), puffing pastry and waffles, making clarified butter, yoghurt and cheese, hardening rice... and much more!
