It is with great pleasure that we announce that as of today Chef Paolo Dalicandro is the official chef of Tauro Dryers.
Paolo has been working with us for a long time and we have already realised many beautiful projects together (among others, we would like to mention his most recent course during the first gathering of the drying peopleheld in Bologna), but there are so many ideas in common that this sodality can only herald many more adventures together!
Paolo knows how to dry with style and great mastery and each of his experiments has always pushed the boundaries of drying: his potato slices dried in a desiccator, which finally look like 'french fries' but much healthier, his candied in a desiccator and smoked flaked salt... and the future surely holds other surprises!
