For maintain that good perfume of mushrooms freshly harvested, the best method is still drying, which will not only preserve it for months but will also release it throughout the house as long as you dry them.
After cleaning your fresh mushrooms as explained in a previous article, cut them into slices of about 5 mm and place them on the baskets of the dryer. The mushroom is historically one of the most dried products and, for this reason, we have dedicated a specific programme: the P2 Mushrooms and thin slices.
Then start the machine and let it run until the cycle is complete (18 h). Check the drying status of your mushrooms and store them in clean, hermetically sealed jars in a cool, dark place.
