Ein Rezept, das vom Chefkoch Piergiorgio Siviero entwickelt wurde.<\/p>\n<p><strong>Zutaten<br \/>\n<\/strong>F\u00fcr Sohle:<br \/>\n1 Sohle<br \/>\n30 g gesch\u00e4lte Mandeln<br \/>\n1 Spargel<br \/>\n4 Zichorien-Puntarelle<br \/>\n1\/4 Kopf Radicchio aus Verona<br \/>\nwei\u00dfer Pfeffer<br \/>\nHallen<br \/>\nNatives Oliven\u00f6l extra<\/p>\n<p>500 ml Himbeeressig<br \/>\n5 g Zucker<\/p>\n<p>1 Becher mit ganzen Himbeeren<\/p>\n<p>F\u00fcr die Thunfischsauce:<br \/>\n100 g Petersilie<br \/>\n1 in \u00d6l eingelegte Anchovis<br \/>\n10 g Kapern<br \/>\n300 ml kaltes Wasser<br \/>\n40 g frischer Thunfisch<br \/>\ndie Schale einer halben unbehandelten Zitrone<br \/>\n50 ml EVO-\u00d6l<\/p>\n<p><strong>Verfahren<\/strong><br \/>\n<strong>Trockene Himbeeren<\/strong> zuvor gewaschen und getrocknet <strong>bei 65\u00b0C f\u00fcr mindestens 24 Stunden<\/strong>. Den Essig bei schwacher Hitze unter Zugabe des Zuckers einkochen lassen, bis eine glatte, aber cremige Masse entsteht.<br \/>\nF\u00fcr die Thunfischsauce: Die Petersilie waschen, trocknen und die St\u00e4ngel beiseite legen. In einem Topf das Salzwasser zum Kochen bringen, den Thunfisch hineingeben und sofort vom Herd nehmen. Lassen Sie ihn mindestens 5 Minuten im Wasser liegen, nehmen Sie ihn dann heraus und trocknen Sie ihn ab. Alle Komponenten au\u00dfer dem \u00d6l mischen. Wenn die Mischung glatt ist, das \u00d6l wie eine Mayonnaise einr\u00fchren.
